The bouchon refers to a restaurant which could be found in Lyon, France. It serves delicious traditional Lyonnaise cuisine like sausages. Duck pate or roast pork. These dishes are said to be fatty and are heavily oriented on meat.

Before, the bouchons came from small inns which are often visited by silk workers who pass through Lyon. Its name was derived from the 16th century expression for a bunch of twisted straw. Today, the dishes that the restaurant caters are oriented towards the tourist market. It is a popular restaurant today which is situated in Yountville, California and Las Vegas.

Among the common items offered by the restaurant are the soups which come in tripe soup and pumpkin soup. There are also salads and cold entrees like chicken liver salad, pig’s head cheese and Salade Lyonnaise. There are also hot entrees such as the apple and pork boudin, offal, meat, vegetables, desserts and fish.
