A well known traditional dessert, the Buche de Noelis served in nice presentation every Christmas holidays in France. It is a cake which is shaped like a log that is ready or the fire. It is made of Genoise and is baked in a big, shallow jelly roll pan. It is then frosted to become cylinder in shape and the outside part is frosted.
Buche de Noel’s basic combination is a yellow sponge cake, frosted and filled with sweet chocolate buttercream. This cake is usually served with a part of one end of the cake that is cut off and is set on top of the cake to show a chopped off branch. The texture of the cake which is likened to a bark is often created from the buttercream. Buches are stuffed with powdered sugar to represent snow, tree branches, berries and mushrooms which are often composed of meringue.
